Mmm This was so good!
*Followed from a recipe*
🌹 2 tbsp (25ML) vegetable oil
🌹 1 Medium Ontario onion, chopped
🌹 2 cloves Ontario garlic, minced
🌹 2 tsp (10 ML) finely grated fresh ginger root
🌹 1 tsp (5ML) each of ground cumin, coriander, turmeric ( varies on your taste preference)
🌹 Red pepper flakes (varies on your taste level)
🌹 2 cups (500ML) vegetable broth
🌹 4 cups (1L) cubed Ontario Sweet potatoes)
🌹 1 can (398ML) light coconut milk
🌹 1 tbsp (15ML) fresh lime juice
🌹 Salt (for taste)
🌹 Chopped peanuts
🌹 Finely grated lime rind
🌹 Coriander or parsley
How to create:
🌹In large saucepan, heat oil over medium heat; cook onion, garlic, ginger, cumin, coriander, turmeric and red pepper flakes, stirring until onion is softened, about 3 minutes.
🌹Add broth, sweet potatoes and coconut milk; bring to boil. Cover and reduce heat to low; cook for 12 to 15 minutes or until potatoes are tender.
Let cool slightly.
🌹 Purée in batches in blender or food processor or with hand held blender until smooth.
🌹Return to saucepan. Stir in lime juice. Season to taste with salt.
