Sweet Potato Thai Curry Soup

Ingredients:

๐ŸŒน 2 tbsp (25ML) vegetable oil

๐ŸŒน 1 Medium Ontario onion, chopped

๐ŸŒน 2 cloves Ontario garlic, minced

๐ŸŒน 2 tsp (10 ML) finely grated fresh ginger root

๐ŸŒน 1 tsp (5ML) each of ground cumin, coriander, turmeric ( varies on your taste preference)

๐ŸŒน Red pepper flakes (varies on your taste level)

๐ŸŒน 2 cups (500ML) vegetable broth

๐ŸŒน 4 cups (1L) cubed Ontario Sweet potatoes)

๐ŸŒน 1 can (398ML) light coconut milk

๐ŸŒน 1 tbsp (15ML) fresh lime juice

๐ŸŒน Salt (for taste)

Garnishes (optional)

๐ŸŒน Chopped peanuts

๐ŸŒน Finely grated lime rind

๐ŸŒน Coriander or parsley



How to create:

๐ŸŒนIn large saucepan, heat oil over medium heat; cook onion, garlic, ginger, cumin, coriander, turmeric and red pepper flakes, stirring until onion is softened, about 3 minutes.

๐ŸŒนAdd broth, sweet potatoes and coconut milk; bring to boil. Cover and reduce heat to low; cook for 12 to 15 minutes or until potatoes are tender.

Let cool slightly.

๐ŸŒน Purรฉe in batches in blender or food processor or with hand held blender until smooth.

๐ŸŒนReturn to saucepan. Stir in lime juice. Season to taste with salt.
